Green Pigeon Peas
Used in a number of ways across the Caribbean, pigeon peas have become synonymous with the cuisines of Bahamas, Jamaica, Puerto Rico, Panama and Trinidad and Tobago. Most commonly eaten with rice, these peas deliver a distinct taste that says "island life."
One of the most popular recipes in the Southern Caribbean is a Trinidad and Tobago favourite, pelau (pronounced PAY-LAO). This is a dish that includes either beef or chicken, and occasionally pumpkin, with pieces of cured pork. Check our recipe section for our Carnival Pelau recipe!
