Matouk's Mauby Cordial
Known as "mauby" throughout the English-speaking Caribbean this is a tree bark-based beverage that is wildly popular in the region. Traditionally, the drink is made by boiling buckthorn bark (Colubrina elliptica) then adding sugar and various spices. These spices vary from island to island and can include cinnamon, cloves and even Angostura bitters.
Some liken the taste to root beer while others say it has a distinct licorice flavour. This Matouk's Mauby Concentrate takes all the work out of a tedious process. Simply add to water and enjoy!
